About our Pasture and Forest Raised Pork
We might be a bit biased, but we believe our pigs are the tastiest pigs you’ll find. We credit this to our pigs living the happiest life possible by spending their entire life on pasture and in the woods where they can graze, root through the dirt, and wallow in their self-made mud holes. They eat tree nuts, and sunbathe. Their pastures include a mixture of legumes, grass, and root vegetables such as clover, barley, sorghum, orchard grass, and turnips. As a snack, they receive a daily ration of Middle Tennessee produced non-GMO feed. They are raised without the use of hormones or antibiotics.

Not all of the pig becomes packaged pork. On average about 60% of our pasture raised hog make it from pasture to your freezer. A 280lb. hog will yield approximately 168lbs of packaged cuts. Around 28% of a hog’s live weight is inedible product re- moved during the slaughter and dressing procedure bringing our 280 lb. live hog to 200 lbs. dressed. The internal organs, hair, blood, and other inedible products account for most of this loss. Once the carcass is sanitarily dressed it is hung on a rail and placed into a cooler where it is quickly chilled. Once the carcass is thoroughly chilled it can be cut into retail cuts where another 16% of the weight is removed bringing our 200lb. carcass to 168 lbs. of packaged cuts. Bone dust, fat trimming, boning, grinding, and moisture loss account for this unpreventable waste. Hams and bacon are typically cured and smoked after cutting. |
